Once you place your order we will keep you posted on the status. About a month or two prior to the available date we will give you the butcher's phone number. The butcher will work with you and get all the details he needs to process your order to your exact specifications. How thick do you want your steaks? Bone-in or do you prefer boneless cuts. Do you want more roasts or more hamburger? What percentage of fat do you prefer in your hamburger? Would you like the liver, tongue, heart? Would you like some dog bones?
If you purchase a quarter this means you will share a side with another customer. The butcher will attempt to find some common ways to cut up that side to satisfy each customer. There is a good chance that a customer purchasing a quarter will have to make some compromises on their cut up order.
The hide can be purchased for $35 so we will ask you if you would like the hide.
A deposit is required to reserve your order. We will ask for your deposit after you place your order.

We will inform you as things develop and to firm up the date your beef will be ready for pick up. Approximately 3 weeks before your beef is ready we will know the hanging weight and then able to compute the remaining balance of your order. Once this balance is received we will notify you of the exact date the beef will be ready for pickup and provide you with the butcher's contact information and address.
