To reserve your beef we will ask for a deposit. ($1,000/whole, $500/side, $300/quarter)
Once your deposit is received we will have you call the butcher to give him your cut-up instructions. ie How thick you want your steaks cut, amount of fat to leave on, fat/lean ratio for ground beef, type of meat cuts you desire, etc.
When your beef has dry aged and been butchered we will provide you the exact amount owed based on the actual hanging weight notify you to come pick it up or set up delivery.
