Our average steer will weigh about 1200 lbs walking in the pasture. After dry aging and butchering that steer will yield about 525 lbs of wrapped frozen meat. Therefore a side, which is half the animal will yield over 260 lbs and a quarter over 130 lbs.

Plan on using the entire freezer for a whole animal, half of it for a side, and a fourth of the freezer for a quarterie. This beef will last well over a year if kept frozen.
Cliftons Farms charges for the hanging weight. We will not know the hanging weight until the steer is processed. The price per pound times your portion of that side will be the total price that you pay (excluding taxes). ie. If you order a quarter your cost will be $4.50 x 187.5 = $843.75
For our customer's convenience we pay all the associated fees and simply include those fees in the price we charge for the hanging weight.. You will save money when you buy bigger portions and if you commit to purchase farther out in the future.
We suggest getting together with family and friends to pool your resources and plan your future beef needs. Then buy the largest portion you can.

A 1200 lb steer will hang at approximately 750 lbs. After dry aging and butchering you can expect about 525 lbs of take home beef if you buy the whole animal.
If you paid $4.10/lb for the whole animal (750*4.10=$3,075 .You will bring home 525 lbs so you will actually pay ($3075/525=$5.86/lb)
A side will hang about 375 lbs
If you pay $4.30/lb for the side
(375*4.30=$1612.50) Therefore you will be charged $1612.50.
You will bring home about 263lbs so you will actually pay ($1612.50/263=$6.13/lb)
A quarter will hang about 187lbs
If you pay $4.50/lb hanging weight
(187*4.50=$841.50) Therefore you will be charged $841.50. You will bring home about 131lbs so you will actually be paying
($841.50/131=$6.42/lb)

A deposit is required because we have to designate the cattle in advance. We feed them an expensive grain diet that the rest of the herd will not receive and we commit to pay the butcher sometimes 6 months in advance. These expenses are not recoverable so we must ask for a deposit.
Whole $1000, Side $500, Quarter $300
This deposit is fully refundable if we fail to provide the customer with their beef near the designated pick-up date. The deposit will be deducted from the final bill.
